6 medium potatoes                                             1/3 c. finely chopped green onions
2 c .grated cheddar cheese                               1 tsp. salt, 1/2 tsp. pepper
1/4 c. butter         2 Tbsp. butter     1 1/2 c. sour cream    Paprika 

Cook potatoes in skins, cool, peel and dice. In a saucepan over low heat, combine cheese and 1/4 cup butter. Stir occasionally until almost melted. Remove from heat and blend in sour cream, onion and seasoning. Fold in potatoes and turn into a greased 2 quart casserole. Dot with 2 tablespoons butter and sprinkle with paprika. Bake uncovered in 350* oven for 30 minutes. Serves 8.
